In a conversation with celebrity chef Vicky Ratnani:

We caught up with Chef Vicky Ratnani to learn more about his latest project and share his personal choices from his city. excerpts…

Tell us a little bit about Disney Delicious…

We just shot the pilot last year. Rangers, who is filming the show, reached out to me, and it was something I thought was completely different, something I hadn’t done before. I totally get along with this place where the whole banter is between me and this kid. I’m almost like his tormented aunt and he comes back really happy every time. I think it was a great experience, and it was written really well. I felt like this would work really well, and I think the chemistry worked.

How much trial and error and research has gone into making these alternative fast food dishes?

I do this for a living. The thing is, I’ve been cooking for many years. I have been cooking for different types of people, preparing different types of food in different parts of the world. There are certain items that make food healthy or unhealthy, and there are items that will change in terms of the quality of the ingredients, the choice of ingredients you can use, or the way you cook with them. This is the only way to make it unhealthy and vice versa. So, basically, it’s not exactly fast food. It’s more like innovative food or simple dishes made with innovation. This gives moms a lot of knowledge and motivation that such food can be cooked at home without much fuss. The skill level is about five to six out of ten. I feel that you can win your child’s heart with food. You can even educate your child about feeding the food, and at the same time, this is the way you prepare the food, the way you use the dish, and how it looks. The food looks really good throughout the show, so I think moms will learn a lot from this.

What’s the most unpredictable dish you’ve made with the most unconventional ingredients on offer?

I think there were quite a few. We made beetroot and carrot candy. It’s almost like a jaggery, but we didn’t use sugar. We used jaggery in it. Then it is served in small pieces covered with chocolate. So that was a great and very innovative recipe. We also made utappam using green moong. We did the multi-grain roti tacos. We also made handmade pasta with white sauce.

What are the top 5 unhealthy alternatives or ingredients?

Jaggery for brown sugar for white sugar, multigrain flour for maida and olive oil for vegetable oil. Then, instead of deep frying, it can be air frying or baking, definitely adding more vegetables to the diet.

If you were to choose only one dish each, respectively, for lunch, breakfast and dinner, that you could have cooked all your life or not, what would these three dishes be?

I think for breakfast, egg white would be a flashy masala. I can eat that all the time. For lunch, I can have Rajma Shawwal and dinner, and I can make whole wheat pasta with aglio oleo.

Can you tell me. What are your favorite places to eat in Bombay?

I don’t know where to start and when to stop. I have my local favorites. Literally. Where I live in Versova, there is Walla Kebab, which I really like. It’s called Fred. Then the guy below my building has the best pani puri. I also love restaurants like Masque. I visit this restaurant often. I also love Americano by Alex. I like the fourth ecstasy of Seifa, and I like Jafar Balbiryani.

What is the most unconventional dish you have possibly tried?

I’ve tried alligator, crocodile, kangaroo,

What do they taste like?

The wise texture of a crocodile and a crocodile taste like chicken, kangaroo is low in fat, and it tastes like veal. I’ve also eaten bugs and crickets in Thailand and cheese with bugs in France.

One city you visit for its food…

I visit Amritsar every year for food and temple.
