Mighty Food: Serving Healthy Meals in the Hills of El Dorado

Restaurateur Nick Dedier has completed a transformation at El Dorado Hills Town Center, transforming his order-by chicken joint at the counter into an upscale table service restaurant that serves gluten-free dishes and no refined flour or sugar.

The fried chicken and double fried chicken sandwiches that were among the staples at The Almighty Food Company’s Mom & Pop Chicken shop have been replaced with refrigerated broccolini salad and a wagyu beef and potato dish featuring sweet potatoes, soft eggs, crispy chickpeas and balsamic chimichurri.

Didier said he aims to offer guests healthy dishes but without sacrificing taste.

The menu is full of vegetarian and vegan options, but beef, chicken, and pork dishes are also available to order.

“One of the great points about our beef, pork and chicken is that they all come from a place called Sunny Farm in Cameron Park,” Deeder said. “It’s a renewable farm.”

This means that the growing methods are helping to regenerate the environment and help fight climate change.

Didier insists that everything on the list is useful.

“If everything is healthy you don’t have to worry about it,” he said. “It’s not like you have to make a decision that something might not be working for you.” .

Didier said friends and family, as well as concerns about his health, have helped advance the concept of healthy foods.

Didier, 42, had been in the restaurant industry most of his life. The original Sacramento area started as a dishwasher at the age of 15.

“I’ve loved him all my life,” he said. “I did it all through high school and college. I got really bored of school and worked all the time to keep myself occupied.”

Didier has worked in some of the best restaurants in the country. He’s the former general manager of Ad Hoc in Yountville, a casual restaurant opened by Thomas Keeler of French Laundry fame.

He also ran Gary Danko’s San Francisco and other upscale American restaurants including Daniel Boulud Brasserie, Jean-Georges Prime Steakhouse, and Thomas Keeler’s other restaurant, Bouchon Bistro.

Of course, every chef wants to open his own restaurant.

Dedier’s first restaurant was Aji Japanese Bistro, which he opened in 2013 in El Dorado Hills Town Center. He sold it after four years.

His second restaurant, Milestone, also in El Dorado Hills Town Center, opened in 2020 and has received strong reviews from food critics.

The American Bistro has fermented its reputation as one of the best places to eat in El Dorado County.

Ta’ala Food Company is a storefront restaurant. Didier said he felt the space at El Dorado Hills Town Center was more suitable for a sit-down restaurant than a chicken restaurant.

However, Didier did not abandon chicken restaurants. He moved Mom & Pop Chicken to a new location in Cameron Park several months ago.
